Here are a few facts about why this colourful beauty food should be on your grocery list:

1. Eggplant contains vitamins A, B1, B2, C and also up 7200 mg of Vitamin P (aka bioflavonoid) which helps with the absorption of vitamin C and to prevent and heal weak blood vessels.

2. Although you may be used to seeing the dark purple variety at your local store, eggplants also come in white and green.

3. It is better to eat a specific vegetable when it is in season to ensure that you are getting the freshest variety available. Eggplants are best through August to October

4. Eggplant can not only enrich your beauty on the inside, but also may help with your external glow. Check out this recipe for a skin care mask using eggplant. Also do a patch test first before trying it on your entire face.
